What’s For Dinner?!

I love to cook. I love to bake. I love food, but when it comes to dinner, isn’t there some sort of magic pill that I can just pop in my mouth, wash it down with a glass of Diet Coke and be full? And why can’t personal chefs be cheap, or free? I guess they know that people like me who hate cooking dinner will shell out the money to have someone do it for them. Well guess what you top chef’s you… I don’t have the extra money to spend on your amazing culinary skills… so I will fake that I have your skills until I win the lottery.

Dinner is a chore. I don’t want it to be. What’s my strategy? Meal planning and making meals ahead. I know that until I get this all under my belt, it might be a time sucker but I’m pretty sure that it’s going to be worth it. I miss my slow cooker. I miss knowing what’s for dinner. I miss knowing that my life I mean dinner is planned out ;) I tried planning out meals before but I half assed it and we ended up back in “What’s for dinner?” land. This time I won’t be such an ass ;) My biggest obstacle is B. He’s on this super outrageous health kick and it’s enough to drive a person mad. especially when they’re hungry! And he doesn’t like casseroles or anything that resembles them which means I have to eat a whole 9 x 13 pan of whatever concoction I made just to make sure it doesn’t go to waste. Believe me, my butt really thanks me for that. Yeah right. Anyway, I’ve never tried to make meals ahead of time like so many claim saves time and energy but I’d really like to start. I mean like really really like to start. Any tips for this first time make ahead meal maker? Have you ever tried to make meals ahead of time? Have you actually had success with it? I feel like I have a gazillion questions but I have no idea who to ask. So I’m asking you. Because I have a feeling you might know some answers.

I most likely won’t be starting this whole meal planning and make ahead meal making until next weekend. I just have a couple dates with the sun that I’d like to not skip out on and I’d rather be over prepared than under prepared for this type of thing. Did you know that there are some women who cook meals for a whole month ahead of time!?!

I wonder if drinking Margaritas while I bake and cook will help me or hinder me. Hmmm… I’ll just have to test it out and see!
