Apple Spice Muffins

Since my tortillas were such a super fail… I decided to pick out not one, but two new recipes to try! And I succeeded at both!

Week Two: Apple Spice Muffins

I got this recipe from the eat better america website a while ago and couldn’t wait to try it. They turned out so well that they were all gone in a couple hours!

Muffins:

3/4 cup fat-free (skim) milk

1/4 cup canola oil or soybean oil (I refused to use either so I used vegetable oil)

1 teaspoon vanilla

1 egg

2 cups all-purpose flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 medium unpeeled apple, finely chopped (1 cup) (I used a macintosh)

Topping

1 tablespoon sugar

1/4 teaspoon ground cinnamon

1. Heat oven to 400. Grease bottoms only of 12 regular size muffin cups or line with paper baking cups.

2. In large bowl, beat milk, oil, vanilla and egg with wire whisk until well mixed. Stir in flour, 1/2 cup sugar, baking powder, salt and 1/2 teaspoon cinnamon all at once just until flour is moistened (batter will be lumpy). Stir in apple. Divide batter evenly among muffin cups. In small bowl, mix topping ingredients; sprinkle over batter.

3.Bake 25 to 30 minutes or until golden brown. If baked in greased pan, let stand about 5 minutes in pan, then remove from pan to cooling rack. If baked in paper cups, immediately remove from pan to cooling racks.

Cooks Notes**

I must have skipped the part where it said to only spray the bottoms of the pan cause I sprayed the whole thing! They still turned out just fine.

I used the entire topping mixture on all the muffins and it was well worth it. They weren’t super sweet from it at all so don’t be skimpy on the toppings!

 

Hope you enjoy this recipe as much as I did! The real apple in these really made them extra special and delicious. My only regret is that I didn’t double the recipe and make more! Maybe next time I’ll have to make some mini muffins too!
