My “Go-To” Meal

B is not a fan of stuffing. I love it. So I was incredibly delighted when I found this recipe that he said we could try. We both fell in love and it’s better than our old “go-to” meal which was italian sausage and penne pasta (which I still love but I’m almost completely over).

I wish I could take 100% credit for this dish but unfortunately I cannot… I found it here on Kraft Foods (which I love).

Here is their recipe:

STOVE_TOP_Sweet_Citrus_ChickenSweet Citrus Chicken

1-2/3 cups hot water
1 pkg.  (6 oz.)  Stuffing Mix for Chicken
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/2-inch thickness
2/3 cup  orange juice
1/3 cup packed brown sugar
3 Tbsp.  butter or margarine, melted

HEAT oven to 400ºF.

ADD hot water to stuffing mix; stir just until moistened.

PLACE chicken in 13×9-inch baking dish. Mix juice, sugar and butter until blended; pour over chicken. Top with stuffing.

BAKE 30 min. or until chicken is done (165ºF).


Here is my recipe:

sweet citrus chicken

1-1/2 cups hot water
I had an 8 oz. package of stuffing mix for chicken that had some eaten but it looked about 6 oz. so I used that
2 boneless skinless chicken breasts  pounded to 1/2-inch thickness and then cut in half to make 4 breasts
2/3 cup  orange juice
1/3 cup packed brown sugar
3 Tbsp.  butter or margarine, melted

HEAT oven to 400ºF.

ADD hot water to stuffing mix; stir just until moistened.

PLACE chicken in a 2 1/2 quart baking dish. Mix juice, sugar and butter until blended; pour over chicken. Top with stuffing.

BAKE 30 min.

I only pour as much of the orange juice mixture as needed to just barely cover the chicken and I only put the stuffing on top of the chicken because it tends to get too soggy if it is just cooking in the juice.

Delish. LOVE this meal!
