Chicken Three Ways

It seems like we get in a rut sometimes with what to eat for dinner so last night, I needed a little variety in my life.

I popped some chicken thighs in the crock pot and added a can of diced tomatoes, some fresh rosemary, thyme, oregano and parsley along with a small chopped up sweet gypsy pepper, a little bit of fresh chopped garlic and a pinch of salt and onion powder and turned it on low.

I’m in love with this Crock Pot because it was my mothers. When I had gck-1, she came and stayed with us for a couple weeks and brought this with her so she could make us some pot roast and dumplings. She didn’t feel like taking it back with her and she wanted a new one, a bigger one, so she graciously left it with us. Love!

I made some brown rice to go with the chicken and the juice and tomatoes over the top of it was delish! The chicken literally fell off the bone when I tried putting it on my plate. There was no work involved. Looks like we might being having chicken thighs more often come fall!

The second way I made chicken was by using 3 simple ingredients: crushed up Crispix cereal, chicken breasts and 1 scrambled egg. I simply dipped the chicken in the egg and then in the cereal and put it on the pan. I cooked them for about 30 minutes on 420F. The results were fantastic! Moist chicken, a hint of sweetness from the cereal and a nice change up from how we normally serve chicken.

And the final way (yes, I seriously made all 3 of these yesterday) was using 4 ingredients. I used chicken breasts, olive oil, lemon pepper seasoning and about a tablespoon of plain bread crumbs. I just put a dab of olive oil over the chicken, sprinkled on some lemon pepper seasoning and then sprinkled on the bread crumbs. I already had the oven set from the previous chicken so I cooked it at 420F for about 25 minutes and they were done! We were too chickened out and full from eating the other chicken so this will actually be some lucky persons lunch for the day ;)

Who needs a cookbook when you have a creative mind?!

    Those all look good. I love making chicken in the crock pot because it gets so tender and just shreds apart easily.
