S’mores Bars
First there were s’mores cookies, then there was s’mores brownies and now there are s’mores bars! Don’t worry, the next recipes are healthy :) Can’t eat like I’m 18 anymore!
Week Three: S’mores Bars
recipe given to me by Shonda Messerchmidt
ingredients:
•3/4 cup butter
•2/3 cup sugar
•1 egg
•1 teaspoon vanilla
•18 whole graham crackers, crushed, about 3 cups
•1/2 cup all-purpose flour
•1/2 teaspoon salt
•8 milk chocolate bars, approximately 1 1/2 ounces each
•3 1/2 cups miniature marshmallows
Preparation:
Heat oven to 350°. Beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in egg and vanilla. Stir in crushed graham crackers, flour, and salt. Reserve 1 cup of the graham cracker mixture and press remaining mixture over the bottom of a greased 13x9x2-inch baking pan. Arrange chocolate bars, in a single layer, over graham cracker crust mixture in the pan. Sprinkle with marshmallows. Crumbled reserved graham cracker mixture over the marshmallows. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack for 10 minutes. Cut into bars and cool completely.
Makes about 2 dozen bars.

Shonda told me to use those super HUGE Hershey’s bars and it would work great but that seemed like, dare I say it… a little too much chocolate! agh! Don’t worry, I ate extra chocolate to make up for that ;) Anyway, I used the medium sized bars. I bought 6 but I only ending up using 4.
They might look delicious when they’re ooey and gooey when you first cut them… but I learned my lesson with the cookies to not eat them until the chocolate is cooled completely. Kinda is an oxy moron because normally the chocolate melting is one of the best parts of s’mores… just trust me on this one.
And wait longer than 10 minutes to cool them in the pan on the wire rack. Unless of course you use to normal small Hershey’s bars. Then they might not be as gooey when you try to cut them.
I also used 4 cups of marshmallows instead of the 3 1/2. I love marshmallows and it bothered me that there were a couple spots the didn’t have a sweet fluffy friend to keep them company.
