No Bake Peanut Energy Granola

gck-1′s a huge fan of granola bars and I am too, but with a price tag of about $4 for 6… I just couldn’t justify the cost. I stumbled upon this recipe while trying to find cheap, easy, and organic snacks for the kiddo, with the goal of finding a great granola bar recipe in mind.

 


Um yeah, the original recipe name says “bars” but mine just wouldn’t stay in bar form, even after I left them cool for an hour, 2 hours, 3 hours… and even after cooling them in the fridge.

So granola it is.

It’s absolutely delicious! And it really does give you energy and keeps you feeling full without feeling weighed down. It’s going to be one of those things that we’ll always have stocked because it’s that good and that simple to make.

 

 

And it’s magical, seriously MAGICAL over vanilla ice cream.

 

Peanut Energy Granola
1/2 cup dry roasted salted peanuts
1/2 cup roasted sunflower seeds, or other chopped nuts
2 cups raisins, or other chopped dried fruit
2 cups rolled or instant oats
2 cups toasted rice cereal, such as Rice Krispies (I used an organic brown rice cereal)
1/4 cup toasted wheat germ, (optional – I didn’t add it)
1/2 cup creamy or crunchy natural peanut butter (I used Peanut Wonder which isn’t even peanut butter really but it’s all I had on hand)
1/2 cup packed brown sugar
1/2 cup light corn syrup, or honey (definitely opted for the organic honey here!)
1 teaspoon vanilla extract

 

Coat an 9-by-13-inch baking pan with cooking spray.
Combine peanuts, sunflower seeds (or other nuts), raisins (or other dried fruit), oats, rice cereal and wheat germ (if using) in a large bowl.
Combine peanut butter, brown sugar and corn syrup (or honey) in a large microwaveable bowl; microwave on High until bubbling, 1 to 2 minutes. Add vanilla and stir until blended. Pour the peanut butter mixture over the dry ingredients and stir until coated.
Transfer the mixture to the prepared pan. Press down firmly. (It helps to coat your fingers with cooking spray.) Let stand for about 1 hour to harden. Cut into bars. Enjoy!

 

*Because mine didn’t stay in bar form, I just put it all in an airtight container and kept it in the fridge.

    Looks amazeballs!! To bad there are so many things in that i just won’t eat any more. I want to make something like it though.
